Waypoint Corn, Sweet Potato and Crab Chowder with Virginia Ham

Makes eight portions / Use moderate heat.

  • Melt butter in stainless steel saucepan and render sausage.
  • Add onions, celery, carrots and garlic. Cook until translucent.
  • Add our and combine.
  • Add stock or clam juice and vermouth.
  • Add sachet.
  • Add cream, bring to a boil and reduce to a simmer (simmer for 20 minutes).
  • Add both diced sweet potatoes and pureed sweet potatoes.
  • Bring to a boil and reduce to a simmer (simmer for another 20 minutes).
  • Add the corn, bring to a boil and reduce to a simmer (simmer for 8 minutes).
  • Add the crab, ham, salt and pepper.
  • Stir gently to incorporate. The crab and ham will heat thoroughly from the heat in the soup.
  • Serve immediately, garnishing each bowl with fresh snipped chives.
