Syrup recipes:

Handmade Spiced Elderberry Honey:

2/3 cup dried black elderberries or 1 cup fresh elderberries

3 1/2 cups water

2 T fresh or dried peeled & grated ginger root

1 cinnamon stick

½ tsp cloves or clove powder

1 cup honey or more to taste

Pour water into medium saucepan and add elderberries, ginger, cinnamon and cloves (do not add honey!). Bring to a boil and then cover and reduce to a simmer for about 45 minutes to an hour until the liquid has reduced by almost half. At that point, remove from heat and let cool enough to be handled. Pour through a strainer into a glass jar or bowl. Let the liquid cool to lukewarm. When it is no longer hot, add honey and stir well. When honey is well mixed into the elderberry mixture, pour the syrup into a pint sized mason jar or 16 ounce glass bottle with lid. Refrigerate.

Hopped Buddha Hand Syrup:

1 large Buddha’s Hand Lemon, scrubbed and chopped into 1/2 inch pieces or smaller

3 cups of granulated sugar

3 cups of water

1/10 oz German Hersbrucker Hops Alpha: 2.0% Beta 6.3%

In a large sauce pan, Bring the water and hops to a boil. Reduce heat to simmer. Stir in the sugar. Keep stirring the sugar until it is all dissolved – being careful not to burn it. Add the chopped lemon pieces. Cover and simmer until Buddha Hand turns translucent, stirring occasionally. It will take about  30-60 minutes. Let it cool and strain into a clean quart size glass jar. Store in the refrigerator with a lid on the jar when it has completely cooled. It will keep for several months. Save the Buddha Hand pieces and let dry overnight or longer and enjoy as candy.
